Use of Pepper Mills as Salt Mills | Q. | I want to purchase a nice pepper mill. One with three levels of how fine or course you grind the pepper. My question is, if I get two such nice mills, will I be able to effectively grind salt in one of them, using the pepper mill as a salt mill?

Steve Yount | | A. | All salt mills need to be made with non-corrosive grinding mechanisms. These may include Stainless Steel, plastic, and ceramic mills. William Bounds does make Stainless mills that may be used either for salt or pepper that have different settings for different levels of coarseness. You are best off to buy the appropriate mills for both. We do carry a number of mill sets that are designed for salt and pepper. Opening Wine | Q. | I went to school in Switzerland and my instructor has taught us to open wine without popping the cork. It is very impolite to pop it in Europe. However, in U.S, it is very common to hear the popping sound coming from the waiter who is opening a bottle of wine. Is it all right to do it this way or it is up to individual. Yes Pauline, the popping of corks is not necessary in opening a bottle of wine or champagne for that matter. Needless noises in the dinning room are not appealing to many people. There is no reason I can think of the make a "noisy extration" of any cork. In the case of champage or sparkling wine it can indicate that the server is not in control of the cork. And worst of all uncontrolled corks can be dangerous if left to fly about the dining room. Cheers!! |
Coffee | Q. | I'm planning on hosting a breakfast. Is there a roast of coffee that is most suitable for all people or should I just get what I like? | | A. | There are as many answers to that question as there are coffee drinkers.
Many Europeans drink a Coffee in the morning that is mostly hot milk with a
shot of strong coffee. We call it a Latte' in this country. I prefer a
double espresso with one sugar. I make it from dark roasted beans that have
a very full flavor. Some like flavored coffees such as Hazelnut or
varieties of chocolate flavorings. You may want to serve something with a
little "pizzazz" for your Breakfast to dazzle your guests. We would be
happy to walk you through the diffent coffees and their flavors when you are

Getting to the grind | Q. | I own a Capresso Bar and am having trouble getting a good crema on my espresso. What grind do you recommend for this machine? | | A. | First of all, let me congratulate you on choosing a great machine. The Capresso Bar is a superb quality espresso maker. The two factors that will affect the crema are water temperature and coffee grind. Make sure that you are giving the machine proper time to heat the water. As for the grind, Capresso recommends using one or two notches more coarse than a coffee house espresso grind using a burr grinder. Ask your local coffee house to do this for you rather that a grocery store because the grocery tends to have poorly maintained grinders. If all else fails, call Capresso Help at 1-800-767-3554.
